Fig Agave Balsamic vinaigrette dressing is here and it is FAB!  It was bottled today – it’s not on the website, we  don’t even have pictures of it yet.  Hmm, we already have orders for it.  Pictures and recipes to follow soon. It is here and it is FAB.

Peanut Allergy Cure?

As a family we are always researching recipes,  nutritionals, origins of foods, wives’ tales and food lore. An article in USA Today about a possible cure for peanut allergies caught my attention for two reasons. First, my daughters both have friends that have severe allergies so we are aware of the perils out there.  Second, the report mentioned “Peanut Flour” and I really noticed that because we use peanut flour in our Plantation Peanut Soup. The article stated that children were given increasingly small doses of peanut flour over a period of time and eventually their  immune systems started to ignore the peanut flour instead of attacking it. Some children had to start with doses so small that it was the equivelant to one-thousandth of a peanut. The doctors in the study have clearly stated that this should not be tried at home or without medical supervision at anytime! So this brings up the questions: Are there more or fewer cases of peanut allergies in the Southern region of the United States? Do natural cures for allergies and illnesses already exist? I know that there are documented cases proving and/or refuting both – what do you think?

Citrus Orzo Salad

serves about 12 or more

You will need

  • 1 lb orzo pasta
  • 8 ounces feta cheese, crumbled
  • 4 garlic cloves, finely chopped
  • 1 large orange bell pepper, chopped small
  • 1 large red bell pepper, chopped small
  • 1 1/2 cups tomatoes, seeded, and chopped
  • 3 tablespoons capers
  • 3/4 cup kalamata olive, pitted and quartered
  • 1/2 red onion, finely chopped
  • 2 tablespoons fresh basil, finely chopped
  • 1 tablespoon fresh oregano, finely chopped
  • 2 green onions, chopped
  • 4 tablespoons Montebello Kitchens Citronette Dressing (more or less to taste)

Directions

  1. Cook your orzo pasta per package directions, cooking until al dente, and drain.
  2. Mix your pasta, feta cheese, peppers, tomatoes, capers, kalmata olives, garlic, and chopped red onion together in a bowl.
  3. Pour the Montebello Kitchens Citronette Dressing over the pasta mixture and mix to combine.
  4. Add oregano, basil, and green onions.
  5. Salt and pepper to taste and toss gently
  6. Chill for one hour before serving.
